Creole Cod & Chips

Our Louisiana Creole is used as a rub in this gorgeous twist on the classic fish and chips!
Chop your potatoes into chips and parboil for 3 minutes.
Drain and transfer to a large bowl. Sprinkle over the Chips & Wedges Rub, shake until well coated, spray with low calorie cooking spray and add to a tray lined with baking paper. Make sure they’re quite evenly spaced so they cook through properly.
Bake for 30 minutes at 180°, turning and adding more low calorie cooking spray halfway through.
Add the peppers, babycorn and tomatoes and return to the oven for another 10 minutes.
While the chips & vegetables are cooking, drizzle the lemon juice over your cod fillets and coat with the Louisiana Creole rub.
Shake the vegetables and chips together, then add the cod fillets on top and return to the oven for 12-15 minutes, until cooked through.
