Spinach & Ricotta Lasagne made with JD Seasonings Amatriciana
This veggie lasagne is a delicious meat-free option – pasta and lots of cheese is always a winning combination in our books! Made with a rich tomato sauce using our Amatriciana kit
- 1 x Pot of JD Seasonings Amatriciana Kit
- 125g Baby spinach
- 1 x Brown onion, diced
- 4 x Garlic cloves, crushed
- 500g Passata
- 160g Mozzarella
- 60g Parmesan
- 16 x Lasagne sheets
- 200g Ricotta
- 30g Cherry tomatoes
- Low calorie cooking spray
Fry off half the garlic and half the onion in low calorie cooking spray, until softened.
Add the spinach and cook until wilted. Set aside to cool.
Fry off the remaining garlic and onion in low calorie cooking spray, until softened. Add in your fresh tomatoes and cook for a further 2 minutes.
Pour in the full pot of JD Seasonings Amatriciana and mix until all the veg is coated.
Pour in the passata and simmer for around 15-20 minutes, until the sauce has thickened.
While the tomato sauce is cooking, chop your cooled spinach before mixing in the ricotta cheese.
Add a layer of tomato sauce to an oven-proof dish, followed by the spinach and ricotta mixture, and lasagne sheets. Repeat, then cover the last lot of lasagne in the remaining tomato sauce, sprinkle over the cheese and bake for around 30 minutes at 180°
