Mexican Rice Casserole made with JD Seasonings AWARD WINNING Mexican Rub
This is a Mexican fakeaway you need to try, made with our Mexican Rub. Plus it’s meat-free and really simple to make.
- 1/2 x Pot of JD Seasonings Mexican Rub
- 260g Long grain rice (cooked)
- 1 x Tin of black beans, drained
- 100g Sweetcorn
- 1 x Red pepper, chopped
- 1 x Spring onion, chopped
- 120g Red Leicester
- 120g Reduced fat cheddar
- 500g Passata
- 1 x Lime (juice)
- 1 x Red onion, finely diced
- 2 x Garlic cloves, crushed
Fry off the garlic and onion along with half a pot of JD Seasonings Mexican Rub in low calorie cooking spray, until softened.
Add in your cooked rice, drained black beans, sweetcorn and red pepper and mix until coated.
Pour over the passata and a squeeze of lime juice and mix well. Transfer to an oven-proof baking dish.
Top with the grated cheese and bake for around 20 minutes. Sprinkle over your spring onion and serve.
