We really enjoyed making this video and more so enjoyed eating the nacho style feast after it we'd made it, this really is a fantastic dish that the whole family will enjoy.

- 1 Pot of JD Seasonings Chilli Con Carne
- 1 Onion, diced
- 1 Red pepper, deseeded and diced
- 500g Minced beef, typically less than 5% fat
- 800g Tinned tomatoes, blitzed with a hand blender or food processor
- 2 TBSP Tomato puree
- 400ml Beef stock
- 400g Tin of mixed beans, drained and washed
- 800g Potatoes, chopped into wedges
- 120g Tube of soft cheese
- 200G cheddar & mozzarella, grated
- Low Calorie cooking Spray
Spray a large frying pan with low calorie cooking spray and place over a medium heat, add the onions and red pepper and fry for 3 to 4 minutes or until soft.
Add the minced beef and fry until browned, then add the full pot of JD Seasonings chilli con carne and mix well.
Now add the blitzed tinned tomatoes, stock and tomato puree, mix well, cove and cook for around 25 minutes.
Remove the lid and add the mixed beans, mix well and cook for a further 15 to 20 minutes.
Meanwhile, spray a baking tray with low calorie cooking spray and spread the wedges out evenly, cook in a preheated oven 190c/gas mark 5 and bake for 25 to 30 minutes or until golden brown, turning once midway through cooking.
Pour the Chilli Con Carne mix into an ovenproof dish, place the wedges around the outside of the Chilli Con carne, squeeze the soft cheese evenly over Chilli then top with the grated Cheddar & Mozzarella then place under a hot grill for 10 minutes or until the cheese has melted.
