Cajun Breakfast Bake made with JD Seasonings AWARD WINNING Cajun
Start the day the JD way with a filling breakfast bursting with flavour, Made with our Cajun Blend.
- 1 x Pot of JD Seasonings Cajun
- 4 x Eggs
- 8 x Bacon medallions, diced
- 2 x Tins of baked beans
- 150g Cherry tomatoes, halved
- 1 x Red onion, diced
- 200g Mushrooms, sliced
- 60g Baby spinach
- 120g Red Leicester, grated
- Low calorie cooking spray
Fry the red onion in low calorie cooking spray for 5 minutes.
Add in the diced bacon and continue to fry for 10 minutes.
Next, add the mushrooms to the pan and fry for another 3 minutes.
Pour in the Cajun Rub and mix until everything is well coated. Add the tomatoes and spinach to the pan and fry for 5 minutes.
Pour in the beans and simmer for 5 minutes, then transfer the mixture to an oven-proof dish.
Make four wells in the mixture with a spoon and crack your eggs into them.
Sprinkle over the grated cheese and bake for 10-15 minutes, until the cheese has melted and eggs are cooked to your liking.
