Cheesy Chilli Stuffed Peppers

Our Cheesy chilli Stuffed Peppers taste amazing and are a fantastic way of getting extra veg into your meals by using a whole pepper.

So easy to make and great as a lunch or dinner.
the combination of the roasted pepper, cheese and our chilli con carne makes makes this meal a real treat the whole family will enjoy.

Ingredients

  • 1 Pot of JD Seasonings Chilli Con Carne
  • 500g Minced beef, typically less than 5% fat
  • 2 Red, 2 yellow and 2 green peppers
  • 1 Onion, diced
  • 400g Kidney beans, washed and drained
  • 400ml Beef stock
  • 1 TBSP tomato puree
  • 400g patata or tin tomatoes that have been blitzed with a blender
  • 200g Long grain rice, cooked
  • 100g Light soft cheese
  • 90g Cheddar, grated
  • 90g Red Leicester, grated
  • Low calorie cooking spray

Method

STEP 1
Spray a large pan with low calorie cooking spray and place over a medium heat.
add the onions and fry until soft and starting to brown.

STEP 2
Add the minced beef and fry until browned then add the full pot of JD Seasonings Chilli Con Carne and mix well, now add the kidney beans and beef stock and mix, then add the tomato puree and the tomatoes and mix well and cook until the liquid has reduced.

STEP 3
Add the cooked rice and stir and cook for a further 5 minutes then remove from the heat and set aside.

STEP 4
Meanwhile, carefully slice off the tops the peppers and discard, the remove membranes and seeds and discard.
Fill each of the peppers with a good squeeze of soft cheese, then add the chilli mixture and top with the grated red Leicester and cheddar cheese.

STEP 5
Bake in a preheated oven 180.c / gas mark 4 for 30 to 40 minutes or until the cheese is golden and the peppers are soft.

Lovely served with a salad
