Cajun Butternut & Feta Salad made with JD Seasonings AWARD WINNING Cajun
A meat-free salad dish that’s full of flavour, made with our delicious Cajun Rub.
- 1/2 x Pot of JD Seasonings Cajun
- 1 x Butternut squash, cut into chunks
- 200g Tenderstem broccoli
- 150g Mixed leaves
- 80g Cucumber
- 1 x Red onion, sliced
- 60g Baby plum tomatoes
- 120g Reduced fat feta
- Low calorie cooking spray
Coat your diced butternut squash in low calorie cooking spray and half a pot of JD Seasonings Cajun, transfer to an oven-proof dish and bake for 35 minutes at 180°.
Roast the tenderstem broccoli in the oven for around 15 minutes, while your butternut squash is cooking.
Pile your salad into the bowls then top with your cooked butternut squash, tenderstem and crumbled feta.
