One Pot Hunter’s Chicken Rice

One Pot Hunter’s Chicken Rice made with JD Seasonings AWARD WINNING BBQ rub
If you love a one-pot meal and a pub fakeaway, this one is for you! Made with our BBQ Rub it’s bound to be a family favourite.
Ingredients
- 1 x Pot of JD Seasonings BBQ Rub
- 2 x Chicken breasts, diced
- 4 x Unsmoked bacon rashers, diced
- 300g x Long grain rice
- 500ml x Passata
- 750ml x Chicken stock
- 150g x Reduced fat cheddar, grated
- 1 x Red onion, diced
- 1 x Pepper, sliced
- 3 x Garlic cloves, crushed
- 4 x Tbsp BBQ Sauce
- 1 x Tbsp balsamic vinegar
- 1 x Tbsp sweetener
- 1 x Tbsp tomato puree
- Low calorie cooking spray
Method
STEP 1:
In low calorie cooking spray, pan fry the red onion, garlic, chicken and diced bacon for 15 minutes.
STEP 2:
Add the long grain rice, tomato puree and our BBQ Rub and mix until fully coated.
STEP 3:
Pour over the passata, balsamic vinegar, sweetener and chicken stock. Add the sliced peppers, mix well and simmer for 20-25 minutes, stirring regularly, until the rice has cooked (add more stock if needed).
STEP 4:
Remove from the heat, sprinkle over the cheddar and either add a lid or some tin foil to the pot for a couple of minutes, until melted.
STEP 5:
Divide between four bowls, drizzle over the BBQ sauce and serve.
