Creamy Cajun Salmon Linguini

Creamy Cajun Salmon Linguini made with JD Seasonings AWARD WINNING Cajun
Our Cajun Rub gives this pasta dish just the right amount of spice and works beautifully with the creamy linguini.
Ingredients
- 1 x Pot of JD Seasonings Cajun Rub
- 4 x Salmon fillets
- 300g Linguini (uncooked)
- 50g Baby spinach
- 1 x Onion, diced
- 100g Baby plum tomatoes, quartered
- 1 x Red pepper, diced
- 3 x Garlic cloves, crushed
- 120g Reduced fat soft cheese
- 1 x Lemon (juice)
- 250ml Vegetable stock
- Fresh parsley to serve (optional)
- Low Calorie Cooking Spray
Method
STEP 1:
Fry the onion, and garlic in low calorie cooking spray for 3-5 minutes, until softened.
STEP 2:
Add the tomatoes and red pepper and fry for a further 2 minutes, before adding the stock and simmering for around 15 minutes, until reduced.
STEP 3:
Meanwhile, cook your pasta according to the packet instructions.
STEP 4:
While your pasta is cooking, coat the salmon fillets in ½ the Cajun Rub and pan-fry for 3 & ½ minutes on each side, starting skin side down.
STEP 5:
Once your stock has reduced, turn to a low heat and add the spinach. Cook for 3 minutes, until wilted.
STEP 6:
Stir in the soft cheese until completely melted. Add a squeeze of lemon juice and the remaining Cajun Rub and continue to stir.
STEP 7:
Add your cooked pasta to the creamy sauce and plate up. Top with your salmon fillets and parsley, and serve.
