Five Bean Chilli Nachos made wit JD Seasonings ChilliCon Carne
This meat-free tex-mex fakeaway is super tasty and perfect for a weekend night in with a movie! Made with our Chilli Con Carne Kit, most of the cooking is done in the slow cooker with only 15 minutes needed to finish things off in the evening.
Ingredients
- 1 x Pot of JD Seasonings Chilli Con Carne
- 2 x Tins of mixed five beans
- 2 x Tins of chopped tomatoes
- 1 x Vegetable stock cube
- 1 x Tbsp tomato puree
- 1 x Pepper, diced
- 1 x Onion, diced
- 3 x Garlic cloves, crushed
- 200g x Mushrooms, roughly chopped
- 300g x Tortilla chips
- 100g x Grated mozzarella
- 100g x Reduced fat cheddar
- Fresh coriander to serve (optional)
Method
STEP 1:
Add everything to the slow cooker (except for the nachos and cheese) and mix well. Re-fill one of the chopped tomato tins with water and add that to the slow cooker too.
STEP 2:
Cook on low for 8 hours.
STEP 3:
Fill an oven-proof dish or tray with your tortilla chips and spoon the five bean chilli over the top. Sprinkle over the mozzarella and cheddar and pop in the oven for 10-15 minutes, until melted.
