Coronation Chicken & Mango salad

A Wonderfull Coronation Chicken & Mango Salad made with JD Seasonings Medium Curry.
Our Medium Curry kit is so versatile, including being used for this easy coronation chicken recipe to create a healthier version of this classic combination. We’ve added mango and lots of veg for a tasty Summer salad – an ideal lighter lunch option!
Ingredients
- 1 x Pot of JD Seasonings Medium Curry kit
- 3 x Chicken breast fillets
- 1 x Mango, diced
- 4 x Tbsp of fat free natural yoghurt
- Mixed salad leaves
- Cucumber
- Baby plum tomatoes, sliced
- 1/2 x Red onion, sliced
- 1 x Handful of pomegranate seeds
- 1 x Handful of sultanas
Method
STEP 1:
Boil your chicken breasts for around 15 minutes, until cooked through.
STEP 2:
Use two forks (or a blender) to shred your chicken.
STEP 3:
Make your coronation sauce by mixing JD Seasonings Medium Curry kit with fat free natural yoghurt, then combine with the shredded chicken, sultanas and pomegranate.
STEP 4:
Layer up your salad, as desired, and top with your coronation chicken mixture and mango chunks.
