A hearty and flavourful pasta bake with minced beef, vegetables, and a rich blend of JD Seasonings spices can be a satisfying meal that's perfect for any day of the week.

Ingredients

  • 1 x Pot JD Seasonings CHEESY PASTA BAKE blend
  • 500g minced beef
  • 300g Pasta (penne, rigatoni, or fusilli work well)
  • 1 x Large onion
  • 2-3 cloves of fresh garlic, minced
  • 1 x Red pepper, diced
  • 1 x Green pepper
  • 1 x Courgette
  • 1 x Carrot
  • 2 x 400g tin chopped tomatoes
  • 2 x Tablespoons tomato puree
  • 80g Mozzarella cheese
  • 80g Cheddar cheese
  • 120g parmesan cheese
  • Low calorie cooking spray
  • Fresh basil leaves for garnish (optional)

Method

STEP 1:
Preheat your oven to 190°C (375°F).
Cook the pasta in a large pot of boiling salted water until just al dente, usually 1-2 minutes less than the package instructions. Drain and set aside.

STEP 2:
Heat a large saucepan over medium heat and spray with low calorie cooking spray.
Add the minced beef, breaking it apart with a spatula, and cook until browned.
Season with half of the JD Seasonings cheesy pasta bake blend and add a pinch of salt.
Once cooked, remove the beef from the pan and set aside.
In the same pan, add a more low calorie cooking spray if needed, then add the onion, garlic, red and green peppers, courgette, and carrot.
Cook until the vegetables are softened, about 10 minutes.
Return the beef to the pan, add the tinned chopped tomatoes and tomato puree, and stir to combine.
Add the remaining JD Seasonings cheesy pasta bake blend.
Simmer the sauce for 20-25 minutes.

STEP 3:
In a large mixing bowl, combine the cooked pasta with the beef and vegetable sauce. Mix well to ensure the pasta is evenly coated.
Transfer half of the pasta and sauce mixture into a large baking dish. Sprinkle with half of the mozzarella, Cheddar and parmesan cheeses.
Add the remaining pasta mixture, then top with the rest of the cheeses.

STEP 4:
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown on top.

STEP 5:
Let the pasta bake rest for a few minutes before serving to allow it to set slightly.
Garnish with fresh basil leaves for a touch of colour and freshness.

 ENJOY JD!!
