Mini Cheesy Taco Bites
Mini Cheesy Taco Bites make fantastic party food or as meal on their own.
A recipe the whole family will enjoy.
Ingredients
- 1 pot of JD Seasonings taco
- 500g mince beef, typically 5% fat or less
- 1 Onion
- 400ml beef stock
- 1 tbsp tomato puree
- 5 Large Tortilla wraps
- 100g Cheddar cheese, grated
- 100g Red Leicester cheese, grated
- Low calorie cooking spray
- 5 TBSP fat free yoghurt
SALSA - 4 tomatoes, diced
- 2 spring onion, finely sliced
- 4 sprigs of fresh coriander
- Juice of 1 lime
- Salt & freshly ground black pepper
Method
STEP 1:
Spray a deep frying pan with low calorie cooking spray and place over a medium heat.
STEP 2:
Add the onion and fry for 5 minutes until soft then add the mince meat and fry for a further 5 minutes until brown.
STEP 3:
Add the pot of JD's Taco and mix well.
STEP 4:
Add the tomato puree and the stock, mix and simmer for 20 to 25 minutes or until reduced then remove from the heat and set aside.
STEP 5:
Using a moose ring, cut 4 discs out of each of the Tortilla wraps then spray them with low calorie cooking spray and brush with a basting brush.
Turn a muffin tray upside down and place each of the discs between the trivets to create a taco shape. Bake at 180°C/gas mark 4 for 5 minutes until firm and golden.
STEP 6
Meanwhile, prepare the salsa, roughly chop the coriander and add to the diced tomatoes and sliced spring onions, add the lime juice, mix well and season to taste with salt and freshly ground black pepper.
STEP 7:
Fill the Taco shells with mince and evenly and place on a baking tray lined with greaseproof papper, top with the cheddar and Red Leicester cheese and bake in the oven 180°C/gas mark 4 for 5 minutes or until the cheese has melted.
STEP 8:
Place the tacos on a platter and top with the salsa and a little fat free yoghurt.
